There
are two versions of this cheese: the first,
made from pure cow’s milk, is normally
sold as a fresh cheese. The small-scale
local production, sold in the village
dairy, is much sought after by cheese
lovers and numerous tourists. The second
is a soft cheese made from cow’s
milk, at times, though more rarely, mixed
with sheep’s or goats’ milk.
The cheeses are medium-large sized, with
a light brown rind. They are sold when
medium mature, and the flavour is a pleasing
blend between the sweetness of the milk
and the bitterish taste of the herbs eaten
by the cows. It often varies according
to the season.
The production area is the entire commune
of Cocconato d’Asti.
